CEDAR RAPIDS – Gardeners are generally hardy people who don’t mind a little rain, but a steady deluge slowed the usual crowds that flock to the Brucemore Garden & Art Show, at least in the morning.

By afternoon, those crowds started to show up, just in time for educational sessions on Midwestern garden grottos, healthy summer appetizers and a walking tour of the Brucemore estate, along with vendor sales of jewelry, art, plants, food and more.

Hy-Vee dietitians Kimberly Proctor and Nicole Johnson whipped up wonderful summer appetizers. Because tomatoes and cucumbers are in-season now, I’ll pass along the recipe for the layered Greek dip that Kimberly made. The dish is reminiscent of a seven-layer taco dip, but with a healthy Greek twist.

Layered Greek Dip

– Spread 16 ounces of hummus on a 10-inch serving platter

– Layer with 12 ounces of plain Greek yogurt

– Chop one-half cucumber and one plum tomato and layer on top

– Add one-fourth cup sliced black olives and 3 tablespoons sliced green onions

– Top with one-half cup crumbled feta cheese
