With our world still in dreary shades of brown and gray, it’s nice to see some green.

In fact, thanks to local growers and their hoophouses, “spring” greens have already been sold at some of the area winter farmers markets for at least a month.

Lettuce, spinach and more are literally cropping up under the protection of the plastic covers.

In some of Iowa’s coldest weather, I’ve dined on the most incredible all-local salads, with greens, beets and walnuts from the Mount Vernon Farmers Market, along with red cabbage from the Iowa Valley Food Co-op.

While I can’t guarantee all of that will be available this Saturday, vendors will undoubtedly have something to whet your appetite for spring.
